0.5 oz Fino Sherry, Tio Pepe
0.75 oz fresh lemon juice
0.25 oz simple syrup (1:1 water/sugar)
2 dashes cocoa bitters, Angostura
1 egg white or vegan emulsifier
2 oz sparkling botanical, Harrington sweet clover
Chocolate shavings and a sprig of mint to garnish
Combine all the ingredients in a shaker except the botanical fizz.
Shake a first time without ice cubes (dry shake).
Fill with ice and shake vigorously.
Strain into a tall glass filled with ice cubes.
Lengthen at Harrington Sparkling Botanicals.
Garnish with chocolate shavings and a sprig of mint to garnish.
